Cucumber Gazpacho

Cucumber gazpacho is everything you've wanted this summer and more. Not only does it have cooling properties to beat the heat, but it's also filling. Sip and enjoy your gazpacho on a nice summer evening to wind down from the day. Plus, you can't deny this is a super easy recipe!

Ingredients:

1 cucumber
1 avocado
1 low sodium vegetable bouillon cube
6oz yogurt (almond, greek, or other)
Pinch of salt

Directions

1) Dice cucumber and avocado. Put all ingredient in to a blender. Blend.

2) Garnish how you'd like and serve!


**Note: You can also blend in whatever herb you'd like, such as cilantro, dill, or chives. Be creative!
Crisp. Cool. Cucumber.
